corn
(or 4-6 ears of fresh corn or frozen corn)

crumbled Cotija cheese
(or feta cheese)

sour cream

mayonnaise

chopped fresh cilantro

(seeds removed and finely chopped)

fresh lime juice

Instructions
Drain the canned corn thoroughly.
Add all the ingredients to a large bowl and mix until well combined.
Chill until ready to serve. Will keep in the fridge for about 3 days.
Serve with tortilla chips!
