In a small bowl, combine the honey, soy sauce, and rice vinegar. Set aside.
Heat 1 tablespoon of oil in a large skillet over medium-high heat. Add the shrimp and cook for 2-3 minutes until pink. Remove to a plate or bowl.
Add the remaining 1 tablespoon of oil to the skillet. Add the garlic and cook for 30 seconds.
Add the sauce mixture and cook until the sauce bubbles and thickens, 2-3 minutes. Return the shrimp to the pan and toss to evenly coat. Serve with freshly steamed rice. Enjoy!
