These homemade pancakes from scratch are SO FLUFFY and easy to make. I've been making these for weekend breakfast for as long as I can remember, and they are always a hit. Soft, fluffy, and perfect with all your favorite pancake toppings.
To a large bowl, add the flour, sugar, baking powder, and salt. Give it a good whisk to combine.
In a medium bowl, whisk together the milk, egg, melted butter, and vanilla extract. It's okay if the butter solidifies at this step.
Pour the wet ingredients into the bowl of dry ingredients, then whisk until JUST combined (there should still be lots of lumps). Be careful not to over-mix or else they will not be as fluffy.
Heat a nonstick pan over medium heat. Scoop ¼ cup of batter into the pan and cook for 2 minutes until the edges dry up and bubbles begin forming on the surface. Flip and cook for another 1-2 minutes until golden brown.
