In a large mixing bowl, whisk together the flour, sugar, and baking powder. Add the wet ingredients and mix until JUST combined - do not overmix, there should be plenty of lumps.
Heat a nonstick skillet over medium heat until hot (about 60-90 seconds). Add ¼ cup of batter and cook until the edges dry up and bubbles form on the surface, about 2 minutes. Flip and cook for another 1-2 minutes. Repeat with the remaining batter.
