Chipotle Corn Salsa

This copycat Chipotle Corn Salsa recipe is sweet, tangy, lightly spicy, and even better than the restaurant. Simply stir together frozen corn, cilantro, lime juice, jalapeno, onions, and salt, and it's ready to enjoy.

Ingredients
  

  • 2 cups frozen corn (thawed)
  • ¼ cup red onion (finely chopped)
  • ¼ cup cilantro (finely chopped)
  • ½ small jalepeno (seeded and pith removed; finely chopped)
  • 2 tablespoons fresh lime juice
  • ½ teaspoon salt (or more to taste)

Instructions
 

  • Combine all the ingredients in a small bowl.
  • Serve immediately or refrigerate for up to 5 days.
