These Chicken Quesadillas are perfect for a simple dinner or an easy lunch! They're filled with juicy chicken breast, vegetables, and plenty of melty cheese.
2cupsshredded Monterey jack cheese(or any cheese blend)
4largeflour tortillas
Instructions
Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the chicken in a single layer. Cook for 2 minutes on each side until cooked through. Remove to a plate.
Add the remaining 1 tablespoon of olive oil. Cook the onions and bell pepper for 2-3 minutes until softened.
Return the chicken to the pan along with the taco seasoning. Stir to combine and set aside.
Lay out the tortillas. Brush one side of each tortilla with olive oil, then place them oil-side down. Sprinkle ¼ of the chicken mixture and ½ cup of cheese onto one half of each tortilla. Fold the tortillas in half over the filling.
Heat a nonstick pan over medium-low heat. Cook each quesadilla for 3-4 minutes on each side until golden brown, and the cheese is melted.
