Chicken Quesadillas

These Chicken Quesadillas are perfect for a simple dinner or an easy lunch! They're filled with juicy chicken breast, vegetables, and plenty of melty cheese.

Ingredients
  

  • 2 tablespoons olive oil (divided)
  • 1 pound chicken breast (cut into small cubes)
  • 1 small onion (diced)
  • 1 small red bell pepper (diced)
  • 1 (1-ounce) packet taco seasoning (or fajita seasoning)
  • 2 cups shredded Monterey jack cheese (or any cheese blend)
  • 4 large flour tortillas

Instructions
 

  • Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the chicken in a single layer. Cook for 2 minutes on each side until cooked through. Remove to a plate.
  • Add the remaining 1 tablespoon of olive oil. Cook the onions and bell pepper for 2-3 minutes until softened.
  • Return the chicken to the pan along with the taco seasoning. Stir to combine and set aside.
  • Lay out the tortillas. Brush one side of each tortilla with olive oil, then place them oil-side down. Sprinkle ¼ of the chicken mixture and ½ cup of cheese onto one half of each tortilla. Fold the tortillas in half over the filling.
  • Heat a nonstick pan over medium-low heat. Cook each quesadilla for 3-4 minutes on each side until golden brown, and the cheese is melted.
