Cheesy Mayo Mussels (Chinese Buffet Style)
If you walk into a Chinese buffet and see a tray of these, you know you're about to have a good time. This recipe is quick and easy to make using frozen mussels. It only takes 20 minutes so you can make it for a weeknight.

mayonnaise
(I am using Kewpie Japanese mayo)
2
cloves
garlic
(minced)
½
teaspoon
garlic powder
½
teaspoon
onion powder
½
teaspoon
sugar
1
teaspoon
lemon juice
(or vinegar)
1
pound
mussels in the half-shell
½
cup
shredded mozzarella cheese
Instructions
Preheat your oven to 425°F and set the rack in the middle position.
Combine the mayonnaise, garlic, garlic powder, onion powder, sugar, and lemon juice in a small bowl.
Place the mussels on a baking sheet with the shell on the bottom. Spoon the mayo sauce over the mussels and sprinkle some shredded cheese on top.
Bake the mussels for 8-10 minutes until the cheese is melted and starting to brown in some spots.
