This is my version of the KFC Pepper Mayo sauce that they use on the Twister wraps. I don't have a recipe for the Twister wraps yet, but this mayo sauce is bang on, so I had to share it. You only need three ingredients to make it.
I grew up eating KFC, but I feel like recently it has gotten a bad rap because so many newer, "better" fried chicken places are opening up. Just from my house location, I have over 7 fried chicken places within a half-mile radius. Popeyes, Churches, and a bunch of independent chains. That said, KFC is still one of my top choices.
I recently tried making their Twister wraps at home and they were a huge success (recipe coming soon?!). The pepper mayo was the best part. My wife even asked where I bought the sauce from.
Important ingredients
Mayonnaise
I'm using Hellman's brand mayonnaise. I used to work in the fast-food industry, and it was a little-known secret that many places used Hellman's for their mayonnaise. Hellman's mayo is slightly thicker than other brands which is why I like it the most.
Black pepper
You probably guessed it, but we'll need some black pepper. I used whole peppercorns and ground them in a mortar and pestle until they were a fine powder. Grinding your own peppercorns will give the mayo a much more pronounced pepper flavor than using pre-ground.
Worcestershire sauce
If you taste KFC's pepper mayo by itself, you'll notice it has a slight tang and richness to it. Worcestershire sauce is perfect for adding these elements. You only need a little bit to give the tanginess and richness. I used half a teaspoon for half a cup of mayo.
Next time, I think I'll try using Japanese mayonnaise instead of Hellman's. I might also skip the Worcestershire sauce because Japanese mayonnaise is naturally more savory and tangy than regular mayonnaise. But honestly, this recipe is almost perfect- I just like experimenting in the kitchen.
KFC Pepper Mayo
Ingredients
- ½ cup mayonnaise
- 1 ½ teaspoons ground black pepper
- ½ teaspoon Worcestershire sauce
Instructions
- Combine the ingredients in a small bowl and mix well. I recommend using whole black peppercorns and grinding it yourself for the best flavor.
